So I'm not entirely set on how to patch to the new builds. Is there someone that could provide a bit more of a detailed explanation than that in the Download Center thread?

Yes, sure. You have to download and install main build after which you need not the game Men of War. Next, download the patch (which is now at version 4.35) and install it. In future, when next version is available, just download and install the patch to be up to date.

Main installation - your main installation download once and patch - this is to be downloaded first

Upgrade (required) - your patch file to make the main installation usable *update* - this is patch that is always updated, and you need to download it every time the new version is out(which you can check by going to the last page of download center thread.
